Ramen Kudo is a Jiro-inspired (G-kei) ramen shop two minutes from JR Kishibe Station in Suita. Its owner trained as head noodle-cook at the well-known 'Ramen-so Rekishi wo Kizame' before opening his own shop in August 2019 to serve the noodle exactly as he believed it should be: boiled 15–20 minutes, nearly three times the usual time, for a soft, slippery texture that is rare among G-kei shops built around firm, chewy noodles.

A style built on going soft, not firm

Most Jiro-style ramen prizes a thick, tough noodle that pushes back against the teeth. Ramen Kudo's owner developed the opposite technique while running the noodle station at 'Rekishi wo Kizame': boiling the same style of thick, flat noodle for 15–20 minutes fully gelatinises the starch, producing a soft, almost melting texture that still carries a rich pork-bone shoyu broth, sweet back fat and a strong garlic kick. The approach diverged enough from the parent shop's house style that he eventually opened his own place, in the Suita neighbourhood where he grew up, to serve it his way.

Vegetables are cooked the same way — simmered until very soft rather than kept crisp — so nothing on the plate fights the noodle for attention.

How to order: buy your ticket first, then join the line

At Ramen Kudo, you buy your ticket at the machine inside the shop before joining the queue outside — not after, as at many other ramen shops. Ramen is ¥1,100 for any size (mini 150g, normal 200g, regular 300g or large 500g); ordering the large size requires a ¥10,000 cash deposit at the counter, refunded once the bowl is finished. Shio (salt) ramen is ¥1,200 — buy the regular ticket and hand over an extra ¥100 in cash to request it. A soup-less (shirunashi) shoyu version is ¥1,100, ordered by clipping a clothes-peg onto the ticket, and an evening-only soup-less shio version (¥1,200) adds a subtle yuzu note. The counter itself is standing-only, with no chairs — unusual even by Jiro-style standards.

Just before your bowl arrives, staff ask whether you want garlic. You can also specify the amount of vegetables (free, and refillable), garlic (none by default — it's strong), back fat and sauce strength to your own taste.

Large (500g) orders require a ¥10,000 cash deposit at the counter, refunded once the bowl is finished — a rule introduced after a customer walked out on an unfinished large order.
